We were the first gourmet roaster on the Island, and the first to offer organic and fair trade coffee. We’ve been proudly supplying our customers for over 25 years.
In the roasting process, seven chemical changes occur. What we are essentially doing is caramelizing the sugars. The colour of the coffee, brown to black, is determined by the length of the roasting time. The caffeine is naturally occurring, which is determined by the variety. The amount of caffeine in each variety is determined by the roast, with a brown roast having more caffeine and black having less caffeine by weight.The coffee is best 4 hours after roasting to 4 days. Freshness matters. After the first week the flavour drops off dramatically. We recommend that you buy smaller amounts, more often.
Our Probat Roaster is 6 feet 4 inches tall, 3 feet wide. It has 27 gas jets with an output of 97000 BTU and can roast 26 lb batches. It takes about 12 minutes to brown and 3 more minutes to black.
